Ingredients
16oz box of dried pasta
2 x 15oz cans of cannellini beans, drained and rinsed
6-8 baby courgettes, depending on their size
grated zest of 1 whole lemon
3 tbsp. freshly squeezed lemon juice
3 tsp. extra virgin olive oil
a small handful of freshly chopped chives
a small handful of freshly chopped mint
salt and freshly ground black pepper
Method
1. Bring a large pan of salted water to the boil and cook your pasta to your liking. Once cooked drain under cold running water to cool and then set aside in a serving bowl.
2. Slice the baby courgettes lengthways, as thinly as possible. A swivel bladed peeler is a good tool for this task.
3. Bring a pan of water to the boil and add the courgette strips and cook for 1 minute. When cooked drain and leave to cool.
4. Add the grated lemon zest to the courgettes and pour over the lemon juice and extra virgin olive oil. Also add the cannellini beans, freshly chopped herbs and season to taste with salt and freshly ground black pepper.
5. Add the courgette mixture to the pasta and toss everything together and serve immediately.
